These protein-packed egg bites are a delicious way to get your family flowing in the morning with energy and health. Taking just a few minutes to prepare, bake, and play with whatever ingredients you wish, these egg bites are effortless to prepare and bake!

The best egg-bites for even the pickiest of eaters!

Or at least try a new avenue for those of you or in your family whom don't like eggs. Including me! Fun Fact: The taste/texture of eggs has always bothered me, even as a child. Creating this recipe was simply a result of expanding my pallet. Over the past few years, I have been experimenting with recipes with eggs to incorporate more healthy protein into my diet. In spite of discovering scrambled eggs, sunny side up eggs, and even fried eggs are still out, I've had great success with quiche, egg bites, and various egg casseroles. I find I don't taste the egg as much and the texture doesn't bother me at all. Simply, egg-cellent! If you ask me. :) Now this isn't magic here folks, so if it still doesn't magically work for your picky eaters, at least it was worth a shot in trying a new recipe, and you learned a new way to prepare eggs if you've never tried egg bites before. The Best Easy Oven Egg Bites

Red Pepper and Basil Egg Bites

Ingredients

Here's the ingredients you'll need:

  • 4 Eggs

  • 1 cup Bacon, cooked + chopped**

  • 1/4 tsp Garlic powder

  • 1/4 tsp Onion powder

  • 1 tsp Thyme, dried

  • 1/4 cup Heavy cream **

  • 1/8 cup Milk **

  • 1 cup Cheddar cheese **

  • 1 cup Vegetables **

  • Salt + Pepper to taste

** Ingredients are optional and swappable. **

I used fresh chopped bacon in my recipe but you can opt to have no meat, a different kind of meat such as sausage, all veggies, no veggies, or any combination that sounds good to you. The beauty of egg bites is that they're simple - but extremely versatile. You can also add other fresh vegetables, such as bell peppers, basil, and thyme. My cheese lovers, add additional cheese of choice or swap the cheddar for your favorite smoked mozzarella or gouda.


Depending on your preferences, dairy can also be added in small or large amounts. Having tried the recipe above, I found it to have the perfect texture that resonated well with my family. If you'd rather keep the calories low or opt for dairy-free milk, go ahead! The egg bite world is your oyster my sweet friends!

The number of eggs will determine the number of egg bites, for this recipe with 4 eggs, it will create 9 delicious egg bites. If you'd like a whole pan, please use 5 eggs.


Egg Count

5 - 12 Egg bites (For the family)

4 - 9 Egg bites (Great for 2 people)

3 & Below - 6< Egg bites (Super for a party of one)


Instructions

  1. Preheat the oven to 400°F. Grease 12- count muffin pan with baking spray of choice, or liners. (If using liners, be sure to grease those as well to avoid sticking.) This recipe with 4 eggs will grease a total 9.

  2. In a large bowl, or large Pyrex measuring dish, whisk eggs until well blended. Add in all spices, heavy cream, and milk and whisk well.

  3. Divide chopped bacon among 9 muffin cups, then divide cheese among 9 muffin cups.

  4. Pour egg mixture over bacon and cheese mixture in each muffin cup until 2/3 full.

  5. Bake in preheated oven for 15-20 minutes, or until the egg is set and muffins are slightly browned.


Notes

- Store in an air tight container in the refrigerator for up to 5 days. You can also place some in small reusable or ziplock bags to grab and go.

- Reheat in a warm oven or microwave for 20-30 seconds.

The true game changing method secret for me to enjoy eggs. Quality Eggs + Quality Ingredients.


Not all eggs are made the same, but that's for a different post. However if your looking for a quality egg at a minimum of an ingredient swap. Pay the extra $ and get the Pasture-Raised Organic Brown Eggs. I promise you'll not only see a difference in the yolk color, feel it in the harder shell break, but you will taste it! Plus they're ethically sourced! I also encourage you use any other other fresh quality ingredients where you can. The main reason is it provides more nutrient dense nutrition to your body and it's easier on your gut health to digest.


No pressure whatsoever, I fully understand you'll purchase and use whatever you can afford. That's totally fine! I just wanted to offer you a few options that are of a higher quality.
